Carnival Ears (Traditional recipe with EVOO)

Carnival ears are a typical sweet in many regions of Spain, including Andalusia. They are crispy, thin and aromatic, perfect for celebrating these holidays.

Ingredients:
· 500 g of wheat flour
· 100 ml of EVOO (Extra Virgin Olive Oil)
· 100 ml of milk
· 50 ml of anise or orange liqueur (optional)
· 2 eggs
· 100 g of sugar
· 1 pinch of salt
· Zest of 1 lemon or orange
· 1 teaspoon cinnamon powder
· EVOO Morales
· Powdered sugar to sprinkle

Elaboration:

  1. Prepare the dough: In a bowl, mix the flour with the lemon or orange zest, cinnamon and salt.
  2. Add the liquids: Add the EVOO, milk, anise (if using), eggs and sugar. Mix well until you obtain a homogeneous and smooth dough. If necessary, add a little more flour until it no longer sticks to your hands.
  3. Rest: Cover the dough with a cloth and let it rest for about 30 minutes.
  4. Form the ears: Stretch the dough with a rolling pin until it is very thin. Cut into irregular or ear-shaped pieces.
  5. Fry: Heat plenty of EVOO in a frying pan and fry the ears in batches until golden and crispy.
  6. Drain and sprinkle: Leave them on absorbent paper and sprinkle with icing sugar.
    Ready to enjoy with a good coffee or hot chocolate at Carnival!
    If you want, you can flavor them with a little honey instead of icing sugar.
